We might all know Vitamin C to be the natural cure for colds and the nutrient that keeps our immune system healthy. While this is true, Vitamin C has many other critical roles in our bodies besides warding off illness. Adequate Vitamin C in the diet has been shown to reduce risk of cardiovascular disease, cataracts, inflammation, stroke, infection, and cancer. It also strengthens collagen, which helps to keep the body tissues rigid and intact. This in turn prevents decay in your teeth and gums. The best thing about Vitamin C is that it is readily available in a variety of fresh fruits and vegetables. Citrus fruits, such as grapefruits and lemons, are an excellent source, but bell peppers pack nearly 2-3 times the Vitamin C than a medium orange! Kale is another superfood that contains plenty of Vitamin C, along with many important vitamins and minerals. Other foods high in Vitamin C include broccoli, cauliflower, tropical fruits, berries, cantaloupe, and V8
